INGREDIENTS

SONKLIN • 45 ml / 1.5 oz

Fresh grapefruit juice • 60 ml / 2 oz

Chamomile syrup • 15 ml / 0.5 oz

Bianco vermouth • 15 ml / 0.5 oz

Seltzer water • 30 ml / 1 oz



Garnish:

Grapefruit wedge • 1

Small amount of sea salt • for rim

STEPS

1. Add SONKLIN, grapefruit juice, chamomile syrup and bianco vermouth to a shaking tin with a small amount of ice

2. Shake until chilled

3. Pour into a Collins glass filled with fresh ice

4. Top with seltzer water and stir to incorporate

5. Garnish with a wedge of grapefruit lightly dusted with a small amount of sea salt

NOTES:

Chris Bostick's interpretation showcases how bianco vermouth's softer, more floral character plays beautifully with delicate spirits. The chamomile adds warmth without making the drink feel herbal - it's about aromatics and elegance. The salt rim amplifies the grapefruit's brightness.

Batched Version: Prepare chamomile syrup in advance. Mix SONKLIN, grapefruit juice, chamomile syrup and bianco vermouth in a pitcher and chill. Top with seltzer water to order.
