NOTES:
Chris Bostick's interpretation showcases how bianco vermouth's softer, more floral character plays beautifully with delicate spirits. The chamomile adds warmth without making the drink feel herbal - it's about aromatics and elegance. The salt rim amplifies the grapefruit's brightness.
Batched Version: Prepare chamomile syrup in advance. Mix SONKLIN, grapefruit juice, chamomile syrup and bianco vermouth in a pitcher and chill. Top with seltzer water to order.
HISTORY
This drink represents a modern trend toward sessionable, lower-alcohol cocktails that prioritize balance and refreshment. The White Negroni's success inspired bartenders like Chris Bostick to explore how bianco vermouth could anchor lighter drinks beyond classical templates.
SOKLIN's rice spirit character finds natural kinship with chamomile's delicate florality - both gentle, neither overwhelming. This is comfort in a glass without sacrifice.
