INGREDIENTS

Manzanilla sherry • 0.5 oz / 15 ml

Spiced olive brine • 0.75 oz / 22.5 ml

Crushed red pepper flakes • a pinch (in place of Calabrian chili slices)

SONKLIN • 2 oz / 60 ml



Garnish:

3 spicy feta-stuffed Castelvetrano olives, plus a few extra on the side


Spicy Stuffed Olives:

Feta cheese • 1/3 cup

Crushed red pepper-infused olive oil • 3 oz (in place of Calabrian chili oil, see Notes)

Red pepper flakes • a sprinkle, plus extra for tossing

Garlic powder • a sprinkle

Salt • a dash

Lemon zest • a tiny bit

Castelvetrano olives, pitted • as needed

Olive oil • for tossing

STEPS

1. Add manzanilla sherry, spiced olive brine, crushed red pepper flakes and SONKLIN to a mixing glass with ice

2. Stir for 25-30 seconds

3. Strain into a frosted martini glass

4. Garnish with 3 spicy feta-stuffed Castelvetrano olives, with a few extra on the side

NOTES:

Calabrian chilies (fresh or jarred in oil) can be hard to track down outside specialty shops, so this version swaps them for crushed red pepper flakes, which deliver similar fruity heat and are available everywhere.


Quick chili oil: warm 3 oz olive oil with 2 tbsp crushed red pepper flakes over low heat for 5 minutes, then let steep off-heat for 10 minutes and strain. Use this in place of Calabrian chili oil in the stuffed olive filling.


For the stuffed olives: blend the feta, chili oil, red pepper flakes, garlic powder, salt and lemon zest together until smooth. The ratios are intentionally loose - taste and adjust as you go. Transfer the mixture to a piping bag and pipe into pitted Castelvetrano olives, then toss the stuffed olives with a little olive oil and extra red pepper flakes before serving.


This adaptation uses SONKLIN in place of vodka, letting the rice spirit's clean, delicate character carry the brine and heat without competing with them.

HISTORY

A modern spin on the dirty Martini, built around the idea that a good olive brine deserves as much attention as the spirit itself. The spiced brine and chili-marinated feta push the classic dirty Martini further into savory, snackable territory.


It's a home-bar creation rather than a bar-menu classic, and it wears that plainly - built for maximum olive payoff rather than restraint.
