INGREDIENTS
Choeng Doi Blanc • 45ml / 1.5oz
Sweet Vermouth • 22.5ml / 0.75oz
Cynar • 7.5ml / 0.25oz
Garnish: Lime twist
STEPS
Add all ingredients to a mixing glass with stirring ice.
Stir until well chilled, about 20–30 seconds
Strain into an Old Fashioned glass over a large ice cube
Garnish with a lime twist

HISTORY
The Rabo de Galo is one of Brazil's most iconic cocktails, created in the 1950s in São Paulo. Its name translates to "rooster's tail", a literal Portuguese interpretation of the English word "cocktail". Traditionally made with cachaça and sweet vermouth, it became popular among workers gathering after their shifts, offering a bold yet approachable combination of sugarcane spirit, herbal botanicals, and gentle sweetness. Today, the Rabo de Galo is recognised as a classic Brazilian cocktail and remains one of the best ways to showcase the character of quality sugarcane rhum.
