INGREDIENTS

Choeng Doi Blanc • 45 ml / 1.5 oz

Fresh lemon peel • 3g / 2 swaths

Fresh orange juice • 45 ml / 1.5 oz

Fresh lemon juice • 30 ml / 1 oz

Honey • 5 ml / 1 tsp

White sugar • 2.5 g / 1/2 tsp

STEPS

1. In a heavy pint glass, muddle lemon peel and sugar until uniform paste forms

2. Add Choeng Doi Blanc, lemon juice, orange juice and honey

3. Hold wooden spoon between palms and spin in mixture until integrated and frothy

4. Taste and adjust lemon or honey to balance

5. Strain through sieve into small stemmed glass or over ice

NOTES:

A regional Portuguese specialty from Madeira that plays beautifully with agricultural spirits. The muddled citrus oils create a silky texture. Traditionally served without ice just south of room temperature, though modern versions incorporate crushed ice.

Batched Version: Multiply all ingredients by desired yield and chill components before serving. Muddle to order for best froth, or muddle in batches and serve fresh.

HISTORY

Poncha originated in colonial Madeira as a way to preserve citrus juices and sugar from the island's agricultural bounty. The drink evolved organically as sailors, settlers and sugar workers created refreshing drinks from locally available ingredients. It remains a staple at roadside bars and celebrations on the island.


This Choeng Doi Blanc adaptation honors the original's agricultural DNA while capturing your spirit's delicate sugarcane character. The muddling technique unlocks aromatic compounds that echo the terroir in your distillery's products.
