INGREDIENTS

Sweet Vermouth • 60ml / 2oz

Choeng Doi Blanc • 15ml / 0.5oz

Dry Curaçao • 15ml / 0.5oz

Angostura Bitters • 3 dashes


Garnish: Green olive, orange twist

STEPS
  1. Combine all ingredients in a mixing glass with ice and stir until chilled.

  2. Strain into a rocks glass over fresh ice.

  3. Garnish with an olive on a pick and an orange twist.

NOTES:

Swap Note: The original Eel Bar recipe uses agricole rhum; this version uses Choeng Doi Blanc for its fresh cane-juice brightness and briny, vegetal edge.

HISTORY

The Marianito is a low-proof Negroni riff that originated in Spain's Basque Country, built on sweet vermouth rather than a full pour of gin. Eel Bar in New York City serves its version on tap, using sweet vermouth as the base, brightened with dry Curaçao and a small dose of agricole rhum standing in for the usual gin.


Our version swaps in Choeng Doi Blanc for the rhum. Its fresh, cane-juice character and briny, vegetal edge echo the olive note the original agricole rhum brings to the drink, while keeping the drink's light, sessionable profile intact.
