INGREDIENTS

Choeng Doi Blanc • 45 ml / 1.5 oz

Choeng Doi Blanc (splash) • 7 ml / 0.25 oz

Dry vermouth • 30 ml / 1 oz

Falernum • 5 ml / 1 tsp



Garnish:

Lemon twist • 1

STEPS

1. Add all ingredients to a mixing glass with ice

2. Stir until properly chilled and diluted (around 30 seconds)

3. Strain into a chilled coupe

4. Express lemon twist over the drink for aroma

5. Drop lemon twist into glass as garnish

NOTES:

A forgotten recipe rediscovered in David Embury's cocktail archives that reads like a rum Martini. The falernum provides just enough sugar and spice to bridge the dry vermouth with the rum's tropical notes. The split base (two expressions of Choeng Doi Blanc) adds complexity while staying true to your house style.

Batched Version: Prepare in large batches for events. Mix rum, vermouth, and falernum in a pitcher, chill in refrigerator, then stir with additional ice and strain to order.

HISTORY

The Georgetown Club is a nearly-lost classic from early-20th-century bartending literature, originally made with Cuban white rum. It represents a period when bartenders treated rum with the sophistication typically reserved for gin or whiskey. The recipe lay dormant until modern bartenders rediscovered its elegance.


This version amplifies Choeng Doi Blanc's herbal subtleties by using it as both the primary spirit and a float, creating a layered drink that reveals itself across the palate.
