INGREDIENTS
SONKLIN • 45 ml / 1.5 oz
Fresh lemon juice • 30 ml / 1 oz
Lavender simple syrup • 15 ml / 0.5 oz
Fresh egg white • 1 (or 15 ml aquafaba as vegan alternative)
Creme de violette • 7.5 ml / 0.25 oz (for float)
Garnish:
Dried lavender buds • pinch
Lavender Simple Syrup:
White sugar • 1 cup
Water • 0.5 cup
Dried culinary lavender • 1 tbsp
STEPS
1. Make lavender syrup: Bring water to boil, add sugar and dried lavender in cheesecloth sachet, simmer 5 minutes, remove from heat, cool completely, strain through fine sieve
2. Add SONKLIN, lemon juice, lavender syrup and egg white to a mixing tin (no ice)
3. Dry shake (no ice) vigorously for 15 seconds to emulsify egg white
4. Add ice and shake again for 15 seconds
5. Double-strain into a Collins glass over fresh ice
6. Float creme de violette carefully over the back of a bar spoon to create a violet layer on top
7. Garnish with a pinch of dried lavender buds
NOTES:
The egg white creates a silky, velvety mouthfeel and visual appeal with a thick cap of foam. Lavender syrup must be made with dried culinary lavender (never fresh for syrups - it tastes soapy). Creme de violette floats on top, creating visual interest and adding floral complexity on the first sip. This is an Instagram-worthy drink that tastes as good as it looks.
Batched Version: Prepare lavender syrup in advance (keeps 2 weeks refrigerated). Batch the liquid ingredients without egg white, and add egg white individually at service, dry shake, then add to shaker with ice.
