SONKLIN • 1.5 oz

Dry vermouth • 0.5 oz

Olive brine • 0.25 oz

Manzanilla sherry • 0.25 oz

Tonic water • top

STEPS

1. Combine SONKLIN, dry vermouth, olive brine, and manzanilla sherry in a highball glass with ice

2. Top with tonic water and stir gently

3. Garnish with an olive

NOTES:

SONKLIN is a softer base than gin here, the briny, savory structure carries the drink more than the spirit does.
