Aging and Maturation
Our single estate sugarcane spirits are unaged white spirits. After distillation they, and Choeng Doi Blanc, rest in stainless steel before bottling, for a time that differs by release: 10 months for Rai Phrao 2025, 18 months for Rai Jamnian 2024 and a full year for Choeng Doi Blanc. This page sets out what we rest, for how long, and why the work that matters most happens before the spirit reaches the tank.
Rested in stainless steel
Choeng Doi Blanc is rested for a full year in stainless steel before bottling. Each single estate release lists its maturation time next to the vessel, and our press materials describe the series as unaged white sugarcane spirits. For Blanc, the result is a spirit that balances vibrant cane character with remarkable texture and integration. We publish the numbers so that releases can be compared.

Why the cut comes first
In an unaged spirit there is no wood to round off imprecision, so the cut points carry the weight. We make cuts by tasting and smelling the distillate as it comes off, not by hitting a fixed number. A recent hearts cut ran from 74.4% ABV down to 57.3% ABV over roughly 5.5 hours on the still.
Blending across years
Choeng Doi Blanc uses a perpetual blending system: each batch incorporates spirit from previous years. The single estate releases do the opposite. They isolate individual farm sources, so that the specific character of each site comes through without blending.
