Tasting Notes:
This elegant sugarcane spirit boasts an aromatic profile of jasmine, orange peel, honeyed peach and fresh cane, with subtle notes of coriander seed and sea salt. The palate presents with black pepper, cloves, white chocolate, and a delicate sweet grassy finish, offering an interplay of spice and smoothness. It has a silky, well-rounded mouthfeel and a long, lingering finish.

40ml: Choeng Doi Blanc
25ml: Sweet Vermouth
15ml: Campari
1 dash: Saline Solution (optional)
Combine ingredients in mixing glass, add large pieces of ice and stir to combine
Place large ice cube into glass and strain drink into glass
Rabo de Galo
50ml: Choeng Doi Blanc
2ml: Sweet Vermouth
10ml: Cynar
Lime Twist to garnish
Combine ingredients in mixing glass, add large pieces of ice and stir to until chilled.
Place large ice cube into glass and strain drink into chilled glass. Garnish with lime twist.
Hotel Nacional
60ml: Choeng Doi Blanc
15ml: Apricot Brandy
30ml: Fresh Pineapple Juice
15ml: Lime Juice
7ml Simple Syrup
1 slice: Dehydrated Pineapple
3 dashes: Angostura bitters (optional)
Combine ingredients in a shaker with large pieces of ice.
Shake well until very chilled.

Double strain to a coup glass and wait for foam to rise.
Add three dashes of angostura bitters to the foam and draw a tail with a cocktail pick or tooth pick.

Garnish with pineapple and serve.
