For generations, French vignerons have employed the term "terroir" to capture an intricate connection, a term that defies direct translation into English.​

 

However, the essence of terroir is not unfamiliar. Gardeners, with their intuitive understanding, discern the ideal habitats for plant growth; cacti flounder in waterlogged terrains, while acid-loving azaleas flourish in soil rich with acidity, and fragile blooms wilt in frost-prone alcoves. Similarly, farmers meticulously assess their fields, recognizing areas susceptible to flooding or battered by relentless winds, shaping their cultivation strategies accordingly.​

Our commitment is to show the terroir of Thailand. With minimal processing and no additive production methods, our spirit is the purest expression of the soils, sun and water of Thailand.

Biological Diversity

Thailand's sugarcane crop has grown more and more monolithic over the years as sugar companies have developed new varieties that produce more sugar in a shorter time. We encourage our partners to plant and grow heirloom varieties that are well adapted to their land. For us, sugar content isn't the only consideration. We are in search of new flavours, aromas and diversity.

Stewardship

Not only do we celebrate the sugarcane harvested from the lands, but we also celebrate the hands that farm it. We work directly with land owners, many of whom have farmed their lands for generations. We're honoured to be trusted with the sugarcane they're cared for year after year.

Environment

Our sugarcane harvest is made up of 100% un burnt sugarcane. As the north of Thailand experiences heavy pollution from fires, we're able to assist our partners during the harvest period so they don't need to resort to burning.

Our left over bagasse is turned into bio fuel for our boiler and fermentation solids are added to the natural fertiliser mix that we give away to the local farmers.
